    The 2018 ACF CCPC and Smithfield® Foods Culinary competition is more than a cooking competition…. It’s Chicago’s “City of Neighborhoods” Flavors from all over our beautiful city.  The competition, and each team’s menu, should emphasize flavors from our extensive neighborhoods in our city.  Our city consists of over 100 different neighborhoods and each has its own distinct flavor and story.  Savor the ethnic flavors of Chicago! 

     The 2018 ACF CCPC and Smithfield® Foods Culinary competition takes the creativity and spirited competition to a new level. Prizes include Regional Recognition, Certificates, Team Trophy and a free re-entry to next year’s competition as 1st Place Winner.

    Team Structure

    • Each team consists of 8 student chefs
    • They will be provided Pork Belly or Pork Butt from Smithfield® on the day of the competition.
    • Prior to event they can practice as much as they choose at their own expense.

     

    Format & Rules of the Competition for the Judges 

    • Each team prepares Four (4) plates for the judges demonstrating their technical and creative abilities.
    • Each Team is responsible for creating plate for Judges & Guests (Approx. 300)
    • In keeping with the competition goal of ethnic food in Chicago: the menu should stress sound nutrition. Each team is to explain to the judges how the menu is a presentation of diverse cultural influence within the culinary canvass of our beautiful city.
    • One component on each plate must be Smithfield® Pork Belly or Pork Butt

               

    Venue & Schedule

    • The College of DuPage will host the competition on Monday, September 10, 2018. Presentation is at 5:30pm.
    • Team set up will begin at 12:00pm on Monday, September 10, 2018.

     

    Equipment-What is provided & what you can bring

    Each work station consists of:

    • Four (4) eight - foot tables
    • Stove and oven
    • Electricity is available to be used for food processors, blenders and mixers, if they are items brought by team for event.
    • Access to water
    • The team will be responsible for bringing any utensils needed for event.
    • Teams may not marinate, fabricate, pre-chop, pre-slice foods in advance. That all must be done within the competition period. However, dry ingredients may be premeasured prior to event, such as flour and spices.
    • No common pantry of items will be provided. Each chef must bring his/her own ingredients. Appropriate refrigeration will be available.
    • The host will provide plastic tablecloths, cleaning cloths, sanitizing solutions for wiping, bus tubs and paper plates. It is recommended you supply your own plates for presentation purposes. Napkins and flatware will be provided.

     

    Entrance Fee:

    Limited to the first 10 schools to register for the event @ $50.00 for each team. Payable online at ccpchicagoland.org  Multiple teams can register from the same school. Each registration is independent of the other.
